The cheerful name hints at the haste and skill needed to prepare a wine a few days after the grapes are harvested. For our Novello we select Merlot and a small quantity of Cabernet grapes to exploit its character. Novello is sold only on booking.

Organoleptic characteristics:
Colour: Ruby red with charming violet tinges.
Bouquet: Vinous, fresh, with intense notes of morello cherry and raspberry.
Taste: Rounded, pleasantly tannic but well- balanced, it recalls the taste of the just harvested grapes.

Gastronomic matches:
Excellent with the typical autumn courses: risotto with pumpkin, barley soups, mushroom courses. In the wine shops it matches snacks, fried seasonal vegetables, potatoes or roasted chestnuts.
