The experience of Paladin projects in Valpolicella

April 2018: Casa Lupo is born, a new chapter in the wine history of Paladin, which continues to tell us a long-term passion for wine.
Today Paladin decides to renew its commitment as ambassador of the territory and the production of Italian wine in the world. To welcome this new challenge, we found one of the best terroir of the Venetian area, with a high wine-growing vocation and which has been producing wines for years, becoming a symbol of Italy in the world: The Valpolicella.

Val-polis-cellae is the Latin name of Valpolicella, that means valley with many wineries: it presents itself as a sweep of valleys, from Verona to the Garda Lake. Valpolicella extends for 240 square kilometres and its area is approximately 6.000 hectares of vineyards, alternated with olives and cherry trees. The structure of the soil is extremely rich, thanks to the presence of a varied, predominantly calcareous territory, which benefits from a mild climate, thanks to the proximity of the Lessini mountains and the lake.

Mother of some of the most important Italian wines, the Valpolicella has got her darling child: the Amarone, the champion of Italian oenology, an extraordinary blend of Corvina, Corvinone and Rondinella grape.
It’s a very elegant red wine, the fruit of a tradition that has been witnessed since the Visigothic age of Theodoric. What is special about the production of our Amarone is the long period of grape withering, which continues from September- October until January-February in small wooden boxes. After this, the process of winemaking begins, this can be extended for months at very low natural temperatures. It follows a slow aging in oak barrels and finally in bottles: the result of this process is the rare quality of this champion of Italian oenology.
Last but not least are the Ripasso, which is produced by the blend of Amarone marcs with a young Valpolicella, and the Riserva Amarone.

Here Paladin is working in close collaboration with the winegrowers of Valpolicella, bringing together their local sensitivity with the methods and skills of Paladin agronomists and oenologists. This is intended to ensure that all steps, from the selection of grapes to bottling, are carried out on the spot, making treasure of that local heritage of knowledge that enhances the uniqueness of the territory: choosing the right area, land and vines, such as Corvina, Corvinone and Rondinella.
